A great dinner idea for the warm summer months. Fresh ingredients make this simple cold soup a perfect starter to any meal or served as the meal itself.


6ozcan tomato paste
6 medium ripe tomatoes
1⁄4colive oil
1⁄4cwhite wine vinegar
1 cucumber (peeled)
6 stalks celery
1 green pepper
1⁄2 large white onion
1⁄4cfresh parsley
1⁄4twhite pepper
1⁄4tblack pepper
1Tsmokey hot sauce
1 large ripe lemon (juiced)
  sour cream (for topping)


Start with a large serving bowl. Place tomato paste, 3 tomatoes and olive oil, vinegar and salt in food processor and blend until smooth. One by one, place all other ingredients including the additional 3 tomatoes in food processor and pulse until finely chopped. Remove each ingredient from processor before pulsing the next. Add black and white pepper, lemon juice and hot sauce. Mix well. Transfer 2- 2 1/2 cups of mixture back into the food processor and blend until smooth. Mix well and chill for 30 minutes before serving. Add a dollop of sour cream to each bowl to serve. Serve with tortilla chips or toasted GF bread.
