What could be better than sweetened and glazed sweet potatoes? How about glazed sweet potatoes with a 1/4 of the fat and sugar than the recipe we all grew up with! This recipe is amazing.

Ingredients

1lbsweet potatoes (peeled and sliced into 1/2 in slices)
1⁄4tolive oil
1Tcorn starch
1Tbrown sugar
3⁄4corange juice
2Tlemon juice
1⁄4cchopped pecans (optional)

Instructions

Preheat oven to 425 degrees. Oil a 1-quart casserole dish. Place potatoes in dish. Combine cornstarch and brown sugar in a small bowl. Add orange and lemon juices, stirring well. Pour over potatoes; cover and bake for 40 minutes or just until potatoes are tender and glaze is thickened. Remove from oven and sprinkle with chopped pecans(optional).
