Raw Chocolate Coconut Brownies:
You won't believe it until you try it, but once you try it guaranteed you'll be hooked! This sugar free, raw version of chocolate brownies are loaded with nutrients and antioxidants, making this guiltless 'treat' an acceptable snack any time of day.


1 1⁄2cprunes
6Talmond butter
2Tagave nectar
1⁄4cflax meal or finely pulsed flax seeds
3⁄4cunsweetened coconut
6Traw cacao powder


Place prunes and dates in food processor on high setting. Scrape sides of bowl often and combine until thick and smooth. Add almond butter and agave nectar, pulse to combine, then blend to smooth. Add flax and coconut and pulse. Add cacao last and combine.

Transfer mixture to 9x9 baking dish lined with parchment paper. Using a top sheet of parchment, smooth 'batter' into pan evenly by pressing down firmly. Chill for at least 1 hour before cutting into brownie squares. Store in Tupperware in refrigerator. Brownies will keep for up to 2 weeks. Any additional can be frozen.
