Description

Cranberry Millet Salad made with the high protein non-traditional grain of millet, resembles a couscous salad. Sweet hints of fruit and agave combine with the tang and spice of apple cider vinegar and garlic, to create a dish worthy of lunch or dinner.

Ingredients

2 3⁄4cwater
1 1⁄2cmillet
1⁄4cagave nectar
2Tolive oil
3Tapple cider vinegar
1tgarlic
1tsalt
1Tdried mint
1tdried parsley
3⁄4cdried cranberries (chopped well)
1⁄4capple juice

Instructions

In medium saute pan on medium high heat, place millet in pan and toast for 3-4 minutes until grain becomes brown and fragrant. Place toasted grain in boiling water. Simmer on low for 20-25 minutes. DO NOT stir grain once it hits the water or grain will break up and turn to consistency of mashed potatoes. After 20-25 minutes, remove grain from heat. Quickly add chopped cranberries to top of grain without stirring and recover, letting it sit to steam for 5 minutes. Remove cover and let sit an additional 2-3 minutes to cool before fluffing grain with fork. Place cooled and fluffed grain in serving bowl. Whisk together all other ingredients to form a dressing. Mix dressing with grain. Serve warm or chilled.
