This lemon-dill dressing is perfect to top a Nicoise salad or as a topping for salmon. Light and fresh.

Ingredients

1 lemon, well juiced
1theaping, dijon mustard
1⁄4cwhite balsamic vinegar
2Tolive oil
1⁄4tsalt
1thoney
1⁄2tdried dill
1⁄4txanthum gum (more if desire thicker)

Instructions

Place all ingredient in bowl, EXCEPT for xanthum gum. Whisk these ingredients together, then sprinkle xanthum over top and whisk well. Wait 45 seconds before adding more xanthum to increase thickness.
