If you're a fan of traditional meatloaf, then this southwestern inspired version made with ground turkey meat will definitely delight! Serve topped with your favorite salsa.
|3⁄4||lb||white turkey meat (ground)|
|1⁄2||lb||dark turkey meat (ground)|
|1⁄3||c||chunky picante sauce|
|8||oz||drained and rinsed black beans|
|6||white tips of green onions (diced)|
|1⁄2||c||shredded cheddar cheese (dairy free alternative works well)|
|pn||cayenne (more to taste)|
Preheat oven to 375º and spray 9 inch glass baking dish with cooking spray. In medium mixing bowl, beat the egg. Add turkey and combine well. Add picante sauce, chopped cilantro and spices. Mix well (I use my hands!). Add black beans and cheese and mix. Place in baking dish and cook for 40 minutes. Do not overbake! Top with hot sauce or salsa and warm corn tortillas.
