|2 1⁄2||c||walnut halves (pecans alternate well)|
|1⁄2||c||plus 3 tbs unsweetened cocoa powder|
|1||T||GF vanilla extract|
Preheat oven to 350 degrees.
Place walnuts in a large Ziploc bag and roll with rolling pin to chop. Bake walnuts on cookie sheet for 9 minutes, then let cool.
Mix sugar, cocoa and salt in bowl, then stir in walnuts. Add egg whites and vanilla. Beat with fork or mixer on medium speed until batter is JUST mixed. Do not overbeat. Drop batter onto parchment paper lined cookie sheet, by the teaspoon. Bake cookies 15 minutes or until tops are brown.
