When salsa just won't do! This dip is so versatile, as it can be used on chicken, fish, pork, flank steak or as a chip dip.

Cut obvious stem section from cilantro bunch and discard. Use leafy bunch, including some of the remaining stems for recipe. Place cilantro in food processor and pulse until chopped. Add peeled and quartered yellow onion and continue pulsing until onion is finely diced. Add remaining ingredients except for olive oil and place food processor on medium consistent setting to combine. Add olive oil while still mixing, one tablespoon at a time until well combined. Either serve immediately or chill until ready to use. This sauce/dip will keep in fridge for up to a week.
