It's like a fish taco...without the taco!
|6||oz||bag of blue corn tortilla chips|
|1||T||Mrs Dash Fiesta Lime seasoning blend|
|2||eggs plus 1 tbs milk for dipping fish|
Wash and dry tilapia filets in cold water.
In large Ziploc bag, place chips and seasonings. Seal well and roll with rolling pin to make small crumbs (not too fine).
Dip each filet in egg wash, then place in bag to coat with crumbs. Either pan fry each filet in a large pan on medium heat 4 minutes/side OR place in oiled baking dish and bake for 25 minutes at 350 degrees.
Serve on top of shredded green cabbage with salsa and a side of refried beans and rice.
