Ingredients

15ozcan pumpkin
3 eggs
1⁄2csugar or honey
1⁄2cmilk (rice/soy/dairy)
3 1⁄2cGF flour baking mix (Bob's or Bette Hagmans)
1tpumpkin pie spice
  optional raisins or chocolate chips

Notes

If using your own gluten free baking mix, make sure xantham gum and baking soda are included in the mix.

Instructions

Mix all ingredients and spoon into greased muffin pan. Bake at 350 for 45 minutes- 1 hour or until wooden toothpick inserted in center comes back clean.
