A great hearty breakfast to prepare for a long day ahead. I’ll often times make extra to have with brown rice for dinner!
|4||eggs plus 1/8 c water (OR)|
|1⁄2||block silken tofu drained and crumbled|
|1⁄4||c||drained black beans|
|1||c||shredded cheddar cheese (rice/soy/dairy)|
|salsa &/or hot sauce|
Sautee onions, garlic and corn in olive oil until onion is transluscent. Add eggs or tofu and salt, cook until close to done. Add black beans and continue cooking for 1 more minute. Top with cheese and cover to melt. Serve with warm corn tortillas, salsa and hot sauce.
