A great hearty breakfast to prepare for a long day ahead. I’ll often times make extra to have with brown rice for dinner!


4 eggs plus 1/8 c water (OR)
1⁄2 block silken tofu drained and crumbled
1⁄4cdrained black beans
1⁄4ccorn niblets
1Tolive oil
1⁄4cdiced onions
1tcrushed garlic
1⁄4tsea salt
1cshredded cheddar cheese (rice/soy/dairy)
  salsa &/or hot sauce


Sautee onions, garlic and corn in olive oil until onion is transluscent. Add eggs or tofu and salt, cook until close to done. Add black beans and continue cooking for 1 more minute. Top with cheese and cover to melt. Serve with warm corn tortillas, salsa and hot sauce.
