This chicken gets better the longer it's marinated! The alcohol cooks off while baking or grilling, so it is safe for the entire family.
|4||boneless, skinless chicken breasts|
|1||pressed fresh lime|
|fresh cilantro for topping|
This can be marinated up to three days in advance.
Rinse and dry the chicken breasts. Mix all ingredients, except for cilantro and pour over the chicken. Let sit chilled for at least 4 hours to marinate. For best flavor, grill the chicken on a medium heat grill. If baking, cook the chicken in a baking dish or on a grill rack at 375 degrees for 30 minutes. Extra marinade can be simmered stovetop to serve on top.
Top with fresh cilantro and serve over jasmine rice and my Jicama Salad.
