Description

Better tasting than the one at your local supermarket deli bar ... and dollars cheaper to make!! This will become a staple in your gluten free household for sure.

Ingredients

1 cooked roaster chicken (pulled and chopped)
2 stalks finely chopped green onion
1⁄4bncilantro fresh
6ozcontainer plain yogurt
3Tlight canola mayonnaise
2 1⁄2Tyellow curry powder
1⁄4tcoriander
1⁄2tsalt
1⁄2tcrushed garlic
1⁄4tpaprika
1thoney or agave nectar
 ozDiced red grapes, almond slivers (optional)

Instructions

Mix chicken, green onions, cilantro.
In another bowl, mix all other ingredients with a whisk until well blended
Add to chicken and stir well.
Chill for at least one hour. Can be made a day in advance.
Serve with rice crackers, on top of salad, inside lettuce cups or as a sandwich on GF bread
