Better tasting than the one at your local supermarket deli bar ... and dollars cheaper to make!! This will become a staple in your gluten free household for sure.
|1||cooked roaster chicken (pulled and chopped)|
|2||stalks finely chopped green onion|
|6||oz||container plain yogurt|
|3||T||light canola mayonnaise|
|2 1⁄2||T||yellow curry powder|
|1||t||honey or agave nectar|
|oz||Diced red grapes, almond slivers (optional)|
Mix chicken, green onions, cilantro.
In another bowl, mix all other ingredients with a whisk until well blended
Add to chicken and stir well.
Chill for at least one hour. Can be made a day in advance.
Serve with rice crackers, on top of salad, inside lettuce cups or as a sandwich on GF bread
