Description

Fresh and colorful! Choose a firm jicama that doesn't appear to have any dents or mold spots.

Ingredients

1 medium jicama (peeled and diced)
1 red pepper (chopped)
1 yellow pepper (chopped)
1 orange pepper (chopped)
2 avocados (diced)
3Trice vinegar
1Tolive oil
  juice of one lime
1tsalt
2dshot sauce (optional)

Notes

Jicama tends to have two peel layers: first being the light brown outer layer and the second being a lighter hair-like layer. Remove both before dicing. A paring knife will be necessary.

Instructions

Place diced jicama, peppers and green onions in a large bowl. Add vinegar, olive oil, lime juice, salt and mint. Stir to coat. Add diced avocado and mix again. Cover and chill in fridge for one-hour before serving.
