This healthy version of lettuce cups does not skimp on flavor or applause! Can be served as an appetizer or as a main dish.


3 1⁄2Tlime juice
1Tfish sauce
2twheat free tamari
1tbrown sugar
2Tcreamy peanut butter
1Tcanola oil
1tcrushed garlic
1 thai chili minced (any medium heat chili will do)
1lbground turkey
1 red bell pepper (finely chopped)
1 granny smith apple (peeled and shredded)
2 green onions (chopped)
1⁄3ccilantro (chopped)
2Tmint (fresh or dried)
1⁄4cchopped peanuts
  Butter lettuce and lime garnish


Combine first five ingredients to use as the vinaigrette. Heat oil in a large saute pan over medium high heat. Add garlic and chili, sautee for 1 minute. Add turkey to the pan and cook until meat is almost cooked fully. Add the vinaigrette to pan and cook for an additional minute. Transfer mixture to serving bowl. Stir in red pepper, shredded apple, cilantro and mint. Top with crushed peanuts and serve with lettuce cups.
