So good, so quick. Flavorful, but not spicy. This will become a staple in your house for sure.
|1⁄2||large white onion (sliced)|
|1 1⁄2||t||olive oil|
|8||oz||can tomato sauce|
|1||lime (pressed juice)|
|1||can diced green chilis|
|15||oz||black beans (drained and rinsed)|
|salt/pepper/garlic powder/paprika for chicken|
Heat oil in medium heat pan and sautee onion for 2-3 minutes. Season both sides of chicken breast with salt, pepper, garlic powder and paprika. Brown both sides about 1.5 minutes per side. Mix chicken stock, tomato sauce, lime juice, cumin, chili powder and salt. Add to pan. Add can of green chilis and black beans. Cover and simmer until chicken is fully cooked.
Serve over rice or with warm corn tortillas.
