Description

So good, so quick. Flavorful, but not spicy. This will become a staple in your house for sure.

Ingredients

4 chicken breasts
1⁄2 large white onion (sliced)
1 1⁄2tolive oil
3⁄4cchicken broth
8ozcan tomato sauce
1 lime (pressed juice)
1 can diced green chilis
15ozblack beans (drained and rinsed)
1⁄4tsalt
1⁄2tcumin
1⁄2tchili powder
  salt/pepper/garlic powder/paprika for chicken

Instructions

Heat oil in medium heat pan and sautee onion for 2-3 minutes. Season both sides of chicken breast with salt, pepper, garlic powder and paprika. Brown both sides about 1.5 minutes per side. Mix chicken stock, tomato sauce, lime juice, cumin, chili powder and salt. Add to pan. Add can of green chilis and black beans. Cover and simmer until chicken is fully cooked.

Serve over rice or with warm corn tortillas.
