A delightful seasonal treat, combining the flavors of fall and winter. Acorn squash is usually available year round, so you can keep this one on the table with all seasons. Kids will love to pick these slices up and eat like a melon.
Preheat oven to 400 degrees. Place acorn squash on cutting board and slice both ends off. Cut squash in half, cutting with the natural grain. Remove seeds with a spoon. Slice squash in half inch slices and place in mixing bowl. Drizzle with olive oil and stir. Add spices to taste and stir. Place slices on a cookie sheet in a single layer. Bake for 20 minutes on one side, then flip each slice and cook for an additional 15 minutes. DO NOT overcook or slices will not pick up easily for eating.
