This dish is perfect as a side OR served over rice for a quick light dinner.
|1||lb||Brussel sprouts (Halved or quartered, depending on size)|
|15||oz||garbanzo beans (drained and rinsed)|
|1||medium zucchini (shredded)|
|1||t||lemon pepper(salt free)|
|2||T||Parmesean cheese (optional)|
Steam brussel sprouts until tender. While they are cooking, shred your zucchini and drain/rinse garbanzo beans and place in a serving bowl. Once sprouts are done, immediately transfer to the serving bowl. Stir. Add your liquid ingredients and stir. Add salt and stir. Add Parmesean last and serve.
