Description

This dish is perfect as a side OR served over rice for a quick light dinner.

Ingredients

1lbBrussel sprouts (Halved or quartered, depending on size)
15ozgarbanzo beans (drained and rinsed)
1 medium zucchini (shredded)
2Tbalsamic vinegar
1tolive oil
1⁄2 pressed lemon
1tcrushed garlic
1⁄4tsalt
1tlemon pepper(salt free)
2TParmesean cheese (optional)

Instructions

Steam brussel sprouts until tender. While they are cooking, shred your zucchini and drain/rinse garbanzo beans and place in a serving bowl. Once sprouts are done, immediately transfer to the serving bowl. Stir. Add your liquid ingredients and stir. Add salt and stir. Add Parmesean last and serve.
