Fresh, fun, low-fat and always a crowd pleaser, my fish taco recipe will have you serving a delicious dinner in less than 30 minutes for under $15. Tangy and flavorful, not too spicy.
|2 1⁄2||limes, juiced|
|3||or so tablespoons Mrs Dash Fiesta Lime Seasoning|
|1||t||salt, divided 1/2 and 1/2|
|6||oz||container plain Greek yogurt|
|1⁄8||t||red chipoltle powder|
|8||corn tortillas, white or yellow|
|1||small bag of pre-shredded cabbage|
Preheat oven to 425 degrees. Cut one very large or two medium sized foil pieces and place the tilapia filets in the center. One large piece may take 5 minutes longser to cook. Squeeze one entire lime over the top of the fish. Sprinkle 1/2 tsp salt over the top of the fish, then coat both sides of filets moderately with Mrs Dash seasoning. Wrap foil starting from the top, then the sides to create a pouch where no air is leaking. Place in heated oven on a cookie sheet for 20-25 minutes. Cut another medium sized piece of foil. Rewetting your fingers between each, lightly wet each corn tortilla and place in a stack in the center of the foil. Lightly fold the foil and put in oven with fish for the last 10 minutes of the cooking time. I suggest cooking 10-12 tortillas for this recipe, in the event one or more break or you have leftover fish and can make 9 or 10 tacos with this recipe.
For the sauce: In a small bowl, transfer the yogurt. Add paprika, chipotle, 1/2 tsp salt and 1 1/2 limes juiced. Whisk together.
To make the tacos: Warm tortilla on bottom, fish next, top with cabbage and generously top with sauce.
