Not for the dairy free folks out there! This recipe is a great way to use up leftover potatoes. Breakfast lunch, dinner or brunch this hearty pie is loaded with protein and can be served with a side of fruit or a simple green salad. This whips together in minutes, and just over an hour later you'll have a meal your whole family will love.

Ingredients

6 large eggs
1cchopped green onions
1tsalt
1tpepper
3cdiced, peeled, cooked potatoes
1cgrated swiss cheese
1cham, diced
1⁄2cdiced green pepper
1⁄2cmilk

Instructions

Simmer peeled and diced potatoes in water for 20 minutes or until soft. Drain and set aside. Preheat oven to 350 degrees. In a large bowl, whisk together eggs, green onions, salt and pepper. Add potatoes, swiss, ham, green pepper and milk. Mix well. Transfer to deep dish pie plate. Bake for 1 hour 20 minutes. 

Serve as breakfast with sliced fruit or for dinner with a simple green salad.
