Description

A hearty breakfast to stand on it's own as a grab-and-go meal, or topped with yogurt or drenched in your 'milk' of choice. Granola is a perfect way to load up on nutrients such as heart healthy fiber, folate and good fats. Not to mention, it's a meal that will jump start your day and keep you satiated until your next feeding. Store bought granola can be loaded with sugar and rather spendy. My recipe will keep your blood sugar in check while making your house smell delicious! Enjoy.

Ingredients

4cGLUTEN FREE rolled oats (Bob's Red Mill always consistent)
1c100% pure maple syrup
1⁄4colive oil or coconut oil(melted) (coconut oil will enhance shelf life)
1cdried unsweetened coconut
1trounded cinnamon
1⁄4tsalt
1⁄4tginger powder
1csliced almonds
1⁄4csesame seeds (optional)
1⁄4cflax seeds (optional)
1cdried fruit of choice (raisins, dates, golden raisins, cherries, cranberries)

Instructions

Preheat oven to 325 degrees and spray/oil 13x9 baking tray. In small bowl mix together oil and syrup. In larger mixing bowl, mix together all other ingredients, except for dried fruit. Pour liquid over dry ingredients and stir very well. Place on tray in a single layer, in the best way possible. Alternate method is to separate onto two sheets/pans and cook on center racks of oven. With this method, you'll need to switch pans and alternate cooking racks half way through. With either method, check mixture every 15 mintues and stir quickly. Cook for 45-60 minutes. Remove from oven and stir in dried fruits. Cool completely and store in airtight container. Mixture will stay fresh for 2 weeks in pantry. Refrigerate for longer life.
