These low-fat bars are a delicious holiday treat with the flavors of traditional gingerbread men we all grew up loving. Not only will the aroma fill your house with appetizing aromas, but your family will thank you for preparing a light dessert that can be enjoyed any time of day. With such simple ingredients, I've listed these as a breakfast as well as a bakery treat.

Heat oven to 375 degrees. Coat 9in baking pan with spray or butter. In medium bowl, add eggs and beat with mixer on high speed for 2 minutes. Add brown sugar 1/4 cup at a time and beat until well combined. Add pumpkin, molasses and vanilla. Beat on medium for 2 minutes. In small bowl, combine flour, baking powder and spices. Stir well then add to pumpkin mixture and stir until well combined.
Pour into pan and bake for 22-25 minutes or until the center when touched fells springy. Remove from oven and let sit for 10 minutes. Sprinkle with powdered sugar, cut and serve. Keep unused bars in airtight container and eat within 3 days for best freshness. Leftover heated bars are great served with ice cream or whipped topping.
